Hanging to Dry

Once the garlic bulbs dry out, their skins are much easier to peel. The rough outer layers are removed and the garlic is rinsed so that there's no more dirt clinging to the outside. Now they're ready for market.

What has been interesting is seeing how each farmer does this stage differently and their reasons for doing it the way that they do. They are as unique and different as a group of photographers!

I wonder if the drying method gives a different taste. A nice 'bijou' shot!
