I tried a cheat's method of cooking this classic Italian dish. It took about half the time all the "proper" recipes were demanding, and it kind of turned out OK - I think I'd do this again if I were in a hurry (it took about 30 mins) but if we had company I'd take the longer route!
Looks very yummy. I like to cook but sometimes while I want a good meal I just don't want to put the extra effort in - I mean is it always worth it? 2 hours to prepare and 10 minutes to eat. So I absolutely love shortcuts.
