Chicken tonight

Another Jamie Oliver recipe that has become a family favourite - a tray baked chicken, tomato and potato medley with oregano dressing. Aside from the drudgery of blanching and skinning the 800g of cherry tomatoes required, it's an easy one which always goes down a treat.

@robz Rob, you could. Jamie recommends skinning them to intensify the flavours as they bake/roast, and I think he's right.

Very nice. I have never ever ever heard of skinning cherry tomato’s. Sounds tedious but looks delicious!

@haskar @jacqbb @ninaganci Basic recipe: 750g new potatoes, cooked and crushed slightly, 600g cherry tomatoes, blanched and skinned, enough chicken for 4, browned in a pan but no need to cook through. Throw all into a baking dish with an olive oil and red wine vinegar dressing (about 4tbs) into which you have ground some fresh oregano leaves. Toss all together. Throw across some small sprigs of fresh oregano. Cook in oven at 180°C for about 30-40 mins until it looks ready. We serve with a crisp salad. Best of luck!
