Only a small apology for posting another shot of one of our favourite pasta dishes - pasta with potato, green beans, home-made pesto and parmesan. Yum diddly yum!
Recipe: Cook potato in small-medium chunks for 10 mins. Add string pasta (spaghetti, linguini, or I prefer buccatini), further 7 mins. Add green beans (ends cut, tops left on) further 2 mins. Drain. Add your home-made pesto and stir. Serve into bowls. Add lots of freshly grated parmesan.
Many thanks for all of your recent comments, I really appreciate every one of them, thank you.
I would never have thought of putting potato with pasta - it would feel like two different carbohydrates, but now you have said it, it sounds very tasty!
@robz@haskar@ninaganci So, a few tips. It's good if the potatoes are starting to break down slightly; I use buccatini because it is rougher and holds on to the sauce, I've seen this done with tagliatelle as well; the beans must be al-dente, don't overcook them; it has to be home made pesto, it doesn't work with shop bought; it has to be parmesan you grate yourself, not the grated stuff you buy in supermarkets. One of my all time favourite pasta dishes. Enjoy!
