The Day Before

This is Jay’s setup before he made the bagels. He has to make the dough one day ahead because it needs a cold/slow rise in the refrigerator. There are 2 kinds of flour here. He used 30% whole wheat and 70% bread flour.

@ludwigsdiana If you lived closer, I would walk some over. We give many away because we simply can’t eat all he bakes.
