How to make bagels

Jay has been baking sandwich bagels again. The little specs you can see are herbs.
1. Form the dough and let rise for a day.
2. Cut into equal pieces and roll into little balls, then let them rise some more.
3. Twirl to make the hole. It’s stretchy so keeps trying to spring back.
4. Boil in barley malt water. 45 sec on each side.
5. Place the wet bagels on parchment for the bake.
6. Pull out of oven when golden brown.
7. Not shown - eat!
They are so time consuming- I use bicarb in my water- not heard of barley malt water. A very interesting collage, every photo has interest

@ludwigsdiana That seems to be his passion right now. He has actually been teaching classes in our neighborhood. Since he sends them home with bagels, that may be the attraction.

@quietpurplehaze that is water with barley malt at a rolling boil. No fat! Same pan we use to boil pasta.

Wow...those look delish! I never knew there were that many steps or the length of time it takes to make. And then barley malt water. We get our bagels at Noah's but they have changed some of their recipes...and not for the better.
