Doing the donkey work

Every good pirate knows he must take a turn around the capstan now and again.

On land capstans were often tuned by a donkey, however, at sea, a donkey was not a practical thing to have up on deck. So, the sailors were expected to "do the donkey work" and turn the capstan by hand.
