After working all week end at his restaurant, son-in-law John has Monday off. He spent the evening preparing a summer feast for us that will live in our memories for a long time.
Local chicken from the farmers market was marinaded with lemon and oregano from their herb garden then grilled under a heavy pan in the Italian manner. With it we had local corn on the cob and fairytale eggplant, also grilled. An extra special treat was a salad of nectarines, local tomatoes, red onion, grilled rustic bread and basil all lightly tossed in a vinaigrette. The meal was an explosion of flavors, evoking the best of summer.
And for tonight Meg has taken the remaining chicken and mixed it with red cabbage, mango and some other secret herbs and seasonings for a meal far too special to be called leftovers.
