There's a new pizza shop in town called Stuzzi and it has several claims to fame. It is the only Virginia establishment with the VPN certification That's Verace Pizza Napoletana. In fact, according to the slip tucked into their menu, they are one of only 12 out of 65,000 pizzerias in the US that serve authentic Napoletana pizza. In addition to paying a $1,500 certification fee and annual dues, such restaurants must cook their pizzas in a wood fire, and the pizzas must be made with doppio zero, the most highly refined flour, all-natural mozzarella, fresh basil, salt and yeast. It must be made with the proper technique -- hand worked or low-speed mixed dough, a proper work surface (usually a marble slab) and a consistent oven temperature of 800 degrees Fahrenheit. The result is a thin chewy crust with the smoky taste of a wood fire while the sauce is rich with cheese and set off by the wonderful bite of fresh basil.
I was lured in by the prospect of taking pictures of the wood-burning oven, but I'll be back for the pie!
