Baking - NZ Sultana Cake

I finally got round to bake this cake while the Sunday roast was in the oven ! Thank you Pat @happypat , for the recipe A beautiful cake --lovely and moist . Instead of making one large cake I made 2 cakes in 1 pound loaf tins and a little one with the left-over scrapings as a tester !! (I always love a tester !! ) Unfortunately for the photographic effect ,the tester had less sultanas in it and does not convey the true image and amount of fruit in this cake ! The only addition I made was to sprinkle flaked Almonds on the top to compliment the almond essence in the cake and as I love the crunch and taste of the almonds on top !

It looks delicate and delicious - as you say needed more sultanas to be a true sultana cake but testers are designed for great thought while eating!

Delicious looking cake. Will give it a try always good to put the 2nd loaf in the freezer for later. Like the idea of a taster!

Oh you did it Beryl!! What a great idea to make two & put them in loaf tins, so much easier to cut too! We can always learn something & I have been making this cake all these years & never thought to do that! Extra almonds too a new idea! Looks good & it doesn't actually matter if all the sultanas end up in one cake it still tastes good! Sometimes all the sultanas sink to the bottom but it never matters! Well done Beryl .....hope Gary enjoyed!

@happypat Pat the tester-cake on show was only the mixture from around the bowl after filling the two 1lb tins . The two cakes are full of even fruit and delicious -had a slice with my cup of tea this afternoon ! I nearly always do every day fruit cakes in loaf tins and my Christmas Cake I always make in a square tin -- for ease of cutting !

@beryl Well you got lots of cake from that recipe although it's quite generous with the ingredients I find.......8oz of everything isn't cheap but it freezes well too. Glad you liked it!

@happypat Hi Pat, I'm in Mid Wales. Google Kilsby Country House. I don't do evening meals but I offer a mega packed lunch and fruit cake is perfect. I really must try this one.

@susiemc Looks a lovely place Sue.....beautiful gardens too! I expect you get very busy in that lovely oart of Wales. I have been doing B&b for 23 years here & in our original farm. It worked in well with our dairy farming. We have retired from farming now but still do the B&B . I keep meaning to have our website updated, really must get round to it! Google Larbreck House Farm to see where we are. I will follow you now. My guests get oat biscuits not sultana cake! I love doing B&B & don't pay for any advertising now as word of mouth works well & I am busy as I want to be. There is only me left standing in this area so it's good!
