Bara Brith - is a traditional Welsh tea-bread .Bara Brith literally translates as Speckled Bread (as the bread is speckled with dried fruits ) this tea-bread is made from my Mum's recipe -- and delicious too !!
Recipe -- 8 oz mixed dried fruit ,
8 fl oz hot strong tea ,
8 oz S.R. flour
1 teasp mixed spice ,
1oz butter ,
3oz soft brown sugar
1 egg
Method -1) Soak fruit and sugar in hot tea overnight (or 8 hrs )
2) Rub fat into flour .and add the mixed spice
3)Beat egg and add to the dried fruit , then add all ingredients together and mix well .
4) Put into a 1lb lined or greased loaf tin
5) Bake in a pre heated oven -180deg C for 45- 60 mins until cooked and lightly brown , test with skewer .
It is meant to be sliced and buttered , though it tastes good just as it is !
Here I have served it with home made Raspberry and blueberry pots of jelly with yoghurt stirred in with a swirl of cream in top !!
One of my Welsh Recipes , leading up to March 1st -St David's Day (patriot Saint of Wales )
@essiesue Thanks Sue ,I hope this will clarify for you ! Mixed Spice can also be known as "pudding spice " is a British blend of sweet spices ( similar to pumpkin pie spice or apple pie spice in the United States ) Cinnamon is the dominant flavour with nutmeg , allspice , perhaps a touch of ginger and coriander .
Oh, now this is very evocative for me - a very dear friend of mine used to make Bara Brith. She isn't Welsh but she is a good cook and well versed in traditional recipes.
Great theme for a diptych and well presented.
Great shots.
