Had a day out today with a friend - we only went to four shops! One of those days where everything went like clockwork - friendly, helpful staff and we found everything we needed. Anyway, we ended up at a lovely shop for lunch (called Little and Friday) - rather nice - good food and service. On the table was a long tube filled with meringues - the photo shows about a third of it! We didn't actually have any, but they looked yummy….
Here's a recipe from my clever neighbour Viv -
2 egg whites
1 and a half cups white sugar
2 tsp vanilla essence
quarter cup boiling water
Beat egg whites until stiff. Slowly add sugar, vanilla and boiling water.
Place 2 tsp blobs onto baking paper on tray and bake slowly for 1 hour at 150 degrees C
