Stockfish drying racks at Reina

Unsalted cod fillets, air dried outdoors on wooden racks, are called stockfish, and the Lofoten islands are one of the leading producers.
Fabulous capture. I would probably prefer stockfis to bacalao whuch did not appeal to me!

@quietpurplehaze Agree with you Hazel that bacalhao is horrible. Most stockfish in Norway is consumed as 'lutefisk', which is dried cod that has been treated with caustic soda until it has become jelly. It is a Christmas treat in Norway and my wife loves it. Me, I would run a mile, it is worse than bacalhao by several orders of magnitude.
