My latest challenge

A new challenge! I had purchased a meat mincer with the idea of making my own sausages. I then purchased the sausage skins which turned out to be too small. This afternoon resulted in 8 sausages, and an awful mess over the counter, the floor, and from then, our shoes…. Oh dear!

Three good things:
1. the before photo looks good.
2. There is no after cooking photo as they all exploded on heating!
3. Tasted nice though - I put in parsley, garlic, onions, allspice and thyme, soy sauce and dried breadcrumbs.
What a hoot!!! Healthy food though??

@30pics4jackiesdiamond Yes, hardly any fat in these sausages - about 1 tb of olive oil!

Ooh Maggie - you do make me laugh -- I would have loved to be a fly on your kitchen wall ( I promise I would not land on your sausages !! ) They look perfectly shaped and linked - shame they popped in the pan - but its the taste that matters -if you are not entertaining guests !!

Glad they tasted good after all that fuss and effort! I wouldn’t bother with the skins - just shape them and fry. I often remove the skins on sausages before cooking anyway as some brands are so tough!

@pamknowler These are made from collagen and not tough but they didn't contain the sausage satisfactorily! If no skins, then its just a rissole!

I did get a good laugh from your cooking experience. Sorry about the mess though! Maybe next time you should make them into burgers instead and forget the casing. Glad they tasted good. Did you apply the 5 second rule?!? HaHa!

Oh dear glad they tasted good though. When you said they exploded, I had a vision of you wearing your sausages, ha ha. Hope no humans were injured in the making of these sausages.

Wow well done for those beauties! I dread to think what your kitchen looked like at the end.....too much faff for my liking! 😧 I must say though that our son Anthony despaired of NZ sausages when he first came to NZ, he thought they were revolting! He seriously spent quite a time researching different makes, spent time at a local butchers, almost bought a machine to start making then & selling them himself but work got in the way. These days he says NZ have improved so is happier....all the same you can't beat a British sausage & the different varieties made here!
I bet yours tasted good even though exploded!

@happypat Well after my first sausage making experience, I do feel John has the right idea.... "At the time we were rolling in soft sausage meat, he said, "At what time do we decide to get sausages from the market" Now I do agree with him! NZ has a sausage competition as well as a pie one! And both are to be revered!

Did you prick the skins with a fork before cooking? Usually not necessary with commercial sausages which contain fat which renders down quickly and reduces the internal pressure.
