Sausage, peppers, onions, mushrooms — looks delicious! We almost-always try to cook for multiple meals! If it's something you like, why wouldn't you prepare enough for another meal?? (What we try to do is cook tonight, cook something else tomorrow and then have two days of leftovers without eating the same thing two days in a row.)

Thanks everyone. Well, I ate out for lunch today and had crackers and peanut butter for supper. So these leftovers are on the agenda for tomorrow. I'm amazed at all the people who seem to cook way more often than I do. I wait too late, I think, to get a decent meal together. I also resent the amount of time it takes prepping and cooking compared to how long it takes me to eat it. Thus the idea of leftovers is always appealing to me. Anyway, let me know when you're in the area and I'll do this for you.
I cook for a few nights and then we have leftovers for the rest of the week. I'm like you- the less prep time the better. I'd rather be eating the food than chopping it. This looks quite tasty!
I'd eat all the veggies and leave the sausage to my husband ;-)
