Today, I decided to make a nice simple salad. I've been reading my new "The Unofficial Downton Abbey Cookbook" and there is a salad called Spinach Salad with Goat Cheese, Toasted Walnuts, and Pears. Well, I only had the goat cheese, so I looked to the vinagrette--I had all the ingredients, and it's a keeper!
Here is the vinaigrette: 1 T redwine vinegar, 1T balsamic vinegar, 1 T minced shallot, 1/2 cup olive oil, 1 t lemon juice, 2 t Dijon mustard, 1 t sugar, 1 t salt, 1/2 t fresh pepper. This is a wonderful dressing--bold and rich. I'll make the real salad next, but the dressing, oh, the dressing--yes, vinaigrettes are Best!
