Wonderful capture. Looked to me like a Tragopogon pratensis (common names Jack-go-to-bed-at-noon), but those should not be in Australia. So I did check the world wide web and found a Tragopogon species in Australia. I'm not sure, as I do not recall where exactly you live, but it could be a Tragopogon porrifolius. Salsify or Jerusalem star,... Probably not interesting for you, but you made my day, with this pic. ;-)
