This soup is derived from Italy’s “cucina povera”, or “peasant cooking”, a cuisine of necessity and circumstance. Waste not, want not. It’s made from cannellini beans, leftover vegetables and stale bread, Ribollita means reboiled.
Clockwise from top left: sautéing veggies, adding beans, broth, tomatoes, and fresh herbs, etc., adding chopped kale, bread slices are placed on top of the soup, drizzled with olive oil and topped with Parmesan cheese; put into a very hot oven till the bread is toasted and cheese melted. You put the bread in the bottom of your soup bowl and ladle the soup over it, delicious!
It sounds wonderful - and love the way you made the steps into a collage - bet you could do some variations of this with whatever was leftover in the fridge with the broth and tomatoes - and the wonderful sounding topping.

It all looks quite delicious although I don't really want to think about food at the moment. We have been at a friends house for lunch and I don't think I am going to eat again for a week, such a delicious meal.
