Hatch Chili Ristas and Adobe

The building code for Santa Fe requires all buildings to be made of Adobe. It is a beautiful building material and is usually terra cotta color, even though it is just as beautiful in white. Historically it was made of mud (clay) and hay, today they have refined that process with more modern products. The exterior walls are very thick and hold the temperature so the buildings are cooler in the summer and warmer in the winter.

The long strings of dried red Hatch Chili peppers that are so prevalent in New Mexico are a signature decoration particularly in Santa Fe and Albuquerque, the two largest cities in the state. Hanging in your home, you use them for all your recipes that call for red pepper, believe me, New Mexicans like their food hot! Texans do too, but a few of the dishes I’ve had here have really been spicier than what I usually eat.
