Belinda @obmcreations gave me the get pushed challenge of creating a collage of "a few of my favorite things" (which left me humming that song from Sound of Music). It gave me a good excuse to have my absolute favorite meal -- "Rice with Curry Sauce." This is definitely not any kind of authentic curry. As far as I know it's an American creation. When my mother was in her early/mid twenties she was teaching basic journalism classes at KSU and just starting to date my dad. At that time she lived with another woman who taught in the Home Ec department. This dish was popular at that particular time, and they invited the guys they were dating over for dinner and served them this. The men might have thought it was weird, but it didn't stop them from marrying their respective sweethearts. I grew up with their family as good friends of ours.
Rice topped by a white sauce flavored with curry powder and with canned chicken stirred into the sauce. On top of those two hot ingredients (in whatever order strikes your fancy) you put any and/or all of the other ingredients which are cold, not cooked: tomato, banana, pineapple, coconut, peanuts, and french fried onions (we use the kind in the can). Yummmm! I just ate the leftovers while putting this collage together.
The finished mound on the plate in the center is actually pretty sizeable. It just looks tiny because the shots of the small bowls are cropped and appear just as large as the plate and larger bowls of sauce and rice.
I suppose I ought to do another collage with more of my favorite things since this (collectively) is just ONE of my favorite things.
@obmcreations Belinda, here is a collage for you. Since we have another week I MIGHT try another collage, if I come up with suitable material at the National Festival of Wales in Minneapolis. We're driving up to MN on Wednesday and won't be back until late Monday.
@bjj well.... true, Mom made it with tuna. But she said that it was often made with chicken back in the day before we were born. And you do know that I have a husband I love who can't eat the tuna. That would be sooooo wrong to serve him the "authentic" version. LOL
