2 large leeks, trimmed and chopped
600g potatoes, peeled and cut into rounds
500ml milk infused with thyme and garlic
grated cheese
fry leeks in 2oz of butter, season with pepper
layer leeks and potatoes in baking dish, finishing with potatoes, season with salt
pour over milk
sprinkle with cheese
bake for approx 50-60 mins in a moderate oven
Oh I will definitely try this even if it's only for me! Harry says he doesn't like leeks! It's taken me years to get him to like onions but he still says he doesn't like leeks....yet!
this sounds delish, hazel. i love leeks but i never knew how to prepare them and i yet have to come across any decent instructions on it, the same with artichoke.
I just chop off the top of the leek where the dark green is, then cut in half lengthways, then cut across so I end up with half circle shape pieces of leeks. Have to be careful soil has not got into the layers!

You could use onions instead of leeks I guess.
