banana and walnut cake

4oz butter
8oz sugar
3 eggs, separated
8oz peeled, ripe bananas, mashed
5oz milk
8oz SR flour
2tsp baking powder
6oz sultanas
3oz shelled walnuts

1.grease and line an 8inch diameter deep cake tin
2.cream butter and sugar until smooth
3.beat in egg yolks, mashed banana and milk, mix well
4.add flour, baking powder and sultanas, beat until smooth
5.whisk egg whites until stiff, fold into cake batter
6.pour into cake tin, arrange walnuts on top
7.bake at 160-180 for 45mins to 1hour
8.cool in tin 10 mins before turning out

Yes, I'm old fashioned and only have scales which measure in ozs. It's always a problem when different measurements are used!
