@randystreat I think what you are noticing is the rosemary and coriander. Inside it has garlic. The eggplant was mixed ahead of time with salt to pull out bitterness (the recipe says). It’s tasty and versatile because it can be added to things like omelet or spread on focaccia.
@randystreat We had to go buy a small amount, we didn’t have it in the cupboard either. I would say you favorite herbs would work without having coriander.
