Farmers don't like tree-lined field borders because the roots leach water and nutrients out of the soil and the leaves block the sun - the combination reduces crop yields. They are not allowed to fell the trees but ruthless pruning - known as élagage - is allowed as you can see here.
@randystreat No Kathy, which is the whole point. These trees could have been pruned even more viciously as often all the branches are removed except one at the very top of the tree. This lone branch is known as a 'tire sêve' - literally a 'sap puller' which keeps the tree alive.
