Sourdough, in fact all bread doughs, should be scored before baking, to control the rise in the oven. I've not got around to making, or buying, a lame, I use a serrated bread knife- quickly slashing it so as not to cause the rise to collapse. Traditionally a sourdough is scored once, down the centre, or delicate and pretty patterns can be incised - but I've not got to that stage yet in lockdown (I wonder where my craft scalpel is?????)
Sally has asked me to represent the number three in any way I choose; this morning I scored the sourdough thrice for a possible photo opportunity, if it was a successful bake!

My breadhead (hubby) was impressed, as am I. A friend gave him a sourdough starter that she could no longer take care of and he has nurtured his “pet” in the refrigerator ever since.
@salza I think it's just traditional? But I've seen some beautiful sourdough patterns scored into a raw crust @jb030958 whilst I have flour, will bake!! @shutterbug49 I'd really forgotten how easy it is, but my starter is still new and lively, time will tell. Thank you
