We usually invite my mother to dinner on St.Patricks Day for corned beef and cabbage. Had our dinner a day late this year due to kitchen renovations. I haven't heard of the World Wide Minute........aww, I would have joined in! Not heard of chocolate mashed potato cake either - what a brilliant idea. Is it easy to make?
@casablanca an internet search for “Irish desserts” yielded this recipe—basically a chocolate cake with mashed potatoes as an ingredient to add moistness. Saw a lot of variations; this one had a caramel frosting so how could I not make it? Chocolate, caramel and mashed potatoes—3 of my favorite foods! :)
@amyk I am going to have to have a google! I lived in Ireland for 2 years but never came across this recipe idea. Boxties were one of my favourites - like potato pancakes but stuffed with amazing fillings, mostly savoury but sometimes sweet. And as for Irish brown soda bread.........my mouth is watering now!
Mmmm...looks yummy! This is the first time I've heard of chocolate mashed potato cake. I wish I would have been at your place enjoying this cake for World Wide Minute instead of at a local park. :-)
