I do a little thing on FB called "The Dyslexic Typist." I started it because every now and then I have something to say. Dyslexic because I can type a word with all of the correct letters but not often in the correct places.
Anyway, I started a low carb diet the beginning of the year and for the first time in forever it is working. I grew up counting calories but as the years went by that didn't matter for this darn near 72 year old. My last blood work showed that my sugar numbers were beginning to rise, and I do not want to deal with diabetes. I thought I would share some of the recipes that I have had success or failure making.
We love Cincinnati hot chile. This is my uncle's recipe. I tried Heart of Palm for the spaghetti. It bombed - big time. So, I had a bowl of chile with cheddar cheese and onions. It was good because the chile itself is really good so I really didn't miss the spaghetti. Nobody is going to think I am a food photographer.
Looks delicious! My doctor just gave me the go ahead for GOLO or Nutrisystems for women over 55. They're both low carb. The calorie counting never worked for me either. I found out it's the amount of complex carbs that make a difference in weight loss. Pasta, rice, bread, white potatoes, all turn to sugar in the blood stream. That's where I falter because I'm not a big sweet eater, but I love potatoes any way they're fixed!
@marlboromaam and I love pizza and pasta. My son's favorite dishes are my spaghetti and meat sauce and chicken and dumplings. I am reading a lot of books right now and trying to do it right.
