This afternoon I made a batch of ginger biscuits to go into the freezer for future use. They turned out really nice and very gingery, I added extra ginger plus a teaspoon of mixed spice so they are nice and fiery. Hubbie is happy, he just gets one or two out at a time and they stay nice and fresh, they freeze well.

They are just the way I like biscuits - with those cracks on the top. Not too crisp and slightly chewy!
