Cooking gluten free really isn't all that complicated as skills go but when I have to stop and add up the carbs too I get a whole new appreciation for my daughter and her daily life with a child that is diabetic AND has celiac disease!
Diabetic AND CD too? Yikes! My sister had CD and I have a diabetic friend. I can't imagine the dietary challenges of those two combined.

@deburahiru Thanks for that support, Deb! They said it was. @pasadenarose It keeps them on their toes for sure. They seem to be doing OK with it but there was a learning curve and they had just felt comfortable with the diabetes when they had to start all over with the CD. Thanks for the comment!
And a very lucky family to have so much support and a Mom/Grammy to cook for them! I would love to help out, but I'm afraid by the time the stuff got there it would not be very fresh and tasty anymore... :)
You know my struggles with gluten free and dairy free...I feel for a young person who has these issues. I do not do gluten free baking too often...not enough time. And baked goods make losing weight about impossible for me. This looks so yummy
@espyetta They said it was yummy and I do the baking because my daughter hasn't the time either. It is getting easier though because there are more and more products available.
