When you have 8 pounds of frozen blueberries, what do you do?
We had a 4 pound bag of blueberries and when Jerry went to Costco he forgot we already had some and bought another bag! So I found Ina Garten’s Blueberry Coffee Cake Muffins recipe and baked two pans of them. I put an extra cup of berries in the batter. They are so good.
Cream 1 1/2 sticks salt free butter with
1 1/2 C sugar. Cream till light and fluffy, 5 minutes.
Add 3 eggs, one at a time, mixing well after each.
Mix in 1 1/2 tsp vanilla
1 cup sour cream
1/4 c milk
Whisk together 2 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Add to creamed mixture, beat until just mixed.
Add 2 cups of blueberries, fold in with a spatula. (I used 3 cups!)
Scoop the batter into the prepared muffin pans, filling each cup up to the top.
Bake 25-30 minutes till lightly browned on top. Enjoy!
