This gingerbread cake is not supposed to sink in the middle, so I've filled the 'indentation' with slices of crystallised ginger. Going to have a piece and a cup of coffee shortly - to make sure it's OK for the others, and also because I feel in need of some sustenance after a wet 'carrywalk' with Jinks. We both got wet & his 'waterproof' (not so!) boot and his sock fell off so I bathed his paw in salt water when we got home. He tilted his head forward and caught the edge of his lampshade collar on the container of water sending half of it over the floor........ Then I went upstairs to change my wet clothes and found he had installed himself, still damp, on the double bed in the spare bedroom!

I haven't had gingerbread since I was a kid going to school. Your picture helped me remember the smell and taste straight off - like yesterday. Thanks Hazel. Sorry about your wet walk but I'm sure Jinx appreciates your efforts.
