This is a “3-whisk rated” dessert from the Bon Appetit Desserts cookbook (p. 100): “Raspberry-Whipped Cream Truffle Cake.” (A 3-whisk rating means “Sophisticated, requiring more master of technique, such as caramelizing sugar.
