Not sure. It doesn’t really look like a potato, but it does look like potato sprouts growing out of it. Thanks for including the knife for context.

@summerfield @pamknowler from the outset, alien seemed a great guess!
HOWEVER... the answer is : An avocado pit that had already plentifully-grown roots when first cut open! The avo was delicious, and in a story follow up, it was one of two the raccoons knocked down when they raced up the tree!

@pyrrhula I currently have 4 avocado saplings growing in my kitchen window... Out here, no one needs big trees in their gardens! If they actually grew hearty, I don't know where *I* would put them!

An avocado seed. Well how was there any room for the flesh of the avocado fruit with all of those roots?! I’m quite amazed.
