I started WW today in the hopes that somehow I can lose about 15 pounds in the coming three months. I’ve worked out for the past 3 years pretty well, I’m a healthy cook, but I get frustrated when my knees and other body parts ache so much. In Covid times, my exercise is 3.1 miles a day—anyway I want to do it, but because my knees hurt so much, I am afraid of running too much until I can get my weight down. So, might as well give it a try!
I get about 16 points allotted per day—that can go real fast if I choose to use oil or cheese or red meat, so today I made a marinade that had all the points, but everything else (including ground chicken and all the veggies) had zero points.
These are cabbage wraps:
1 lb 98% fat free ground chicken (sautéed in a non-stick pan with a quick spray of Pam)—I made this ahead of time so when it was ready to assemble, my marinade would soak into the sautéed chicken. I let the chicken cool down before adding the marinade and I chill it in fridge.
While the chicken is cooking, I put together this marinade:
1 T Hoisin Sauce (2pts)
2 T Soy Sauce
2 T Seasoned Rice Wine Vinegar (2 pts)
1 tsp thai chili/garlic paste
1 tsp sesame oil (1 pt)
1 medium garlic clove minced (which I do on one of those microplanes to get more flavor)
1-2 inch fresh ginger microplaned as well
After the chicken has cooled, put marinade in and mix around.
Now add in about ½ bell pepper cut in nice thin slices, grated ribbons of one carrot, and one sliced green onion to the mix. Any veggies work in this btw.
Once ready to make this a meal, take either lettuce or cabbage leaves, fill them with the mixture, and top with some cilantro.
Total points in that I eat half of it is 3 pts. for dinner—not too shabby! This plate shows my portion.
Yay for the negative test!! And this food looks so good that hopefully it will make being on WW a treat. You are the second person I know who just signed up - others are friends in FL. It looks like portions are so generous, actually.
@taffy I am willing to give it 3 months. The portions are very generous and today I had 6 points left over! It is pretty flexible, so it helps me design new recipes for fun. :)
