You must have lots of peppers there - they are so expensive here! This recipe sounds delicious - you roast them all stuffed and smell that beautiful smell coming out of the oven?
Looks like a great recipe. We're off to my sister's for drinks this evening. Lots of good food and good whisky. I have decided not to go on the bathroom scales for some time.

Rachel Ray's Stuffed Peppers
(My apologies to my metric friends- I was never good at math so I'm not even attempting to convert the measurements!)
3 tablespoons EVOO (extra virgin olive oil- I use whatever I have!)
4 large red bell peppers halved lengthwise and seeded (I used red, green and yellow)
1 small onion minced
1 zucchini, quartered lengthwise, then thinly sliced crosswise
3 cloves garlic minced (I only used 1)
1 pound ground sausage
1 1/2 teaspoons dried oregano
2 cups marinara sauce
3/4 cup pearl couscous, cooked (I followed the directions on the package for 1 serving)
1 cup crumbled feta
1) Preheat oven to 425 degrees. Brush a rimmed baking sheet with 1 T. EVOO; roast the peppers, cut side up until just softened, 10-15 minutes.
2) Meanwhile in a large skillet, cook the onion in 2 T. EVOO over medium heat, stirring often, until translucent, about 4 minutes. Add the zucchini and garlic, cook, stirring occasionally until zucchini begins to soften; about 3 minutes. Transfer to a bowl. Increase the heat to medium-high and add the sausage and oregano to the skillet. Season with salt and pepper. Cook, breaking the meat up with a spoon, until browned, 4 minutes. Off heat, stir in the zucchini mixture, marinara, couscous and 1/2 c. feta.
3) Spoon filling into pepper halves; top with remaining feta and bake until peppers are tender; about 10 minutes.
I served ours with some crusty bread and dipping oil and spices. You can also swap out the couscous for barley, quinoa, faro, wild rice or any other grain you like. You can also substitute ground lamb for the ground sausage. From start to finish this meal took about 30 minutes to make and it was delicious. Clean up was pretty easy too!
@mrssmith203 Thanks Carla! Believe it or not I battled a slump of sorts all through Dec. that is still somewhat going on. Probably the winter blahs and a few other things (like younger son and family moving to Texas) not helping in the creativity department! So, although I probably could have taken a better shot, I was somewhat happy with the outcome on this one. At least when I saw them all lined up on the pan and thought "ooo- that would be a good shot" I actually thought about taking a picture before I realized, "Oh, I haven't taken a picture today!".

So now, along with tomatoes (which I also like) they will be relegated to one meal per week and no longer in salads. )o: @annied Thank you Annie!
