Cream 1 stick of Butter
1 Cup Sugar (200 grams)
1+Tbs Lemon Zest
Add 2 Eggs & Blend
Pinch of Salt
2 C Flour (300 grams)
1½ t Baking Powder
(Don’t add all at once)
Whisk together until fluffy
¾ - 1 Cup Chopped Pistachios
¾ - 1 Cup Dried Cranberries (Craisins)
FOLD IN with a Spatula and by hand
Shape into a log/biscotti shape (Top Left photo)
Bake 350° / 40 min
Or
Convection 325° / 40 min
Remove from oven
Though hot, Slice loaf into biscotti’s, (Top Rt)
½ to ¾” wide.
Bake 15 minutes longer (Bottom Left)
To Decorate:
Dip into melted White or Dark Chocolate
Sprinkle with Red or Green Sugar

Some long while ago I mentioned this recipe and Lisa, in Texas, said she'd like a copy. What better way to post a photo as I get some Christmas preparations done! This makes up SO FAST, you'll want to give some away now, and never be without it yourself the rest of the winter!
I started baking at 6:15 this morning and I'll be at it for the rest of the day... I know we're ALL so busy this time of year, so if you don't have time for a comment, just snag the recipe and start baking!

I'll totally NOT be on time on so many levels, but by the time cards & presents arrive, I hope people know my heart was in the right place! I'm so far behind (and plans changed and we'll mbe with our daughter & family up the coast) we just got a potted Blue Spruce . @Weezilou so true. our son and his wife live in London and have a 2 and a half year old so we have all that special "growing time" to enjoy again. they are coming over in January so it will be another special time
@cruiser I'm delighted for you! Our Dylan had a birthday April 21 so he's actually two and a half also. We just got off the phone with the family, and that little new voice that says , "I love you Gramma...I love you Papa" must be as sweet as angels singing! You've got some joyous weeks and months ahead! It's lovely to share Grandmother-blessings with you!
OK, I don't need another project, but these sound and look awfully delicious, and Roger loves biscotti, so maybe I will attempt them after the holiday rush is over!! Wonderful collage!
@panthora Have Roger shop for the ingredients and zest the lemon (as I had Ken do!) It makes up in 5 minutes, bakes 40...3 minutes to cut and back to the oven to finish....SO SUPER EASY! If you need some food gifts, this is it! (Michaels still has cute cello bags and they 're on sale! Now, did I make that easy enough for you?!!! xo

Ohhhh...yum! Thanks so much for the recipe. I'll be making joulutorttu (Finnish prune tarts) and blueberry pulla (Finnish coffee bread) over the next week. Food is always good at Christmas time! @allie912 Your daughter would love this recipe! I found it on "the one day" I recorded one of the food network shows. The hostess was "Giada"...I think it was something like that. My friends knew...and one found the recipe on the internet, as well.
