New Zealand Sultana Cake

I got this recipe from the Jimmy Young cook book about twenty five years ago. It's been a favourite in our family ever since & for some reason because it's so moist we always call it 'doggy cake'.
It was only when I gave the recipe for a church cook book that I remembered that it was called New Zealand Sultana cake & actually came from that country! I never realised we had that connection even all those years before our sons went to live there!
Cathy had made this one yesterday & she gave us some to take home.
I had to eat the props!

The best cake all of us ever make!!

1lb sultanas
8oz margarine
3 beaten eggs
12oz caster sugar
1 teaspoon almond essence
12oz plain flour with 2 level teaspoons of baking powder

Put the sultanas into a pan & cover with water. Bring to the boil for approx 8 minutes. Drain & add margarine, stirr till melted.
Beat eggs, sugar & essence till pale. Add egg mixture to sultana mixture. Add flour & baking powder mixture & mix well.
Turn into a 10" cake tin & bake at 325 deg F for 1 hour.....turn down heat for an extra half to three quarters of an hour.

This is very detailed...once you get the hang of it you just bung it all in .....I usually do half this recipe as it is a big cake. It doesn't matter if it's gooey inside as it's nicer like that.

Looks and sounds divine. My question is if it turns very sweet with 1 lb of sultanas?

@anazad511 well it is sweet & almondy Ana but half the recipe is ample for just a family. The sultanas plump up beautifully after being soaked first which of course gives it that moistness.

One look at this nd I immediately thought -my type of cake and then read down to find you had included the recipe -- thanks I shall certainly bake one pronto I also had a NZ "BOIL " Cake from my sister in law years ago which was gorgeous ,but unfortunately I have lost the recipe ! I love these moist fruit cakes but as a diabetic I bake very little these days -- so not to tempt myself -- but this one will be a tried !

@beryl I used to make this a lot Beryl but I darent these days....a whole cake would take Harry & I ages to eat & we would be as fat as pigs but it's a great freezing cake & easy to make when family come....Gary would wolf it down!

@claireuk Smaller is plenty in an ordinary round deeper cake tin Claire....sandwich tin size but deeper.

Ooh and you can freeze it.. When I come off my no sugar snack diet I will make it. I've already fallen off the wagon a couple of times - best just to have no temptation!

@judithg I did think of going no sugar & I really fancied it but there is sugar in everything!! I will wait to see how you go.....you can be guineapig!

Looks like a great cake and sounds very similar to the one Mum use to make.. you have tempted me I may have to make it again..

@brigette Thank you Brigette...you could use butter I would think. I only ever buy marg for cooking & it always works perfectly but butter would be good I think!

@happypat I am just not having sweet snacks. I had got in to the habit of having a biscuit or something after every meal and way to much chocolate. I have lost 2-3 ibs so I need to get back on it and not cheat!

Had to look up sultanas and caster sugar...but we have those ingredients! We just call them golden raisins and superfine sugar. Looks heavenly!

My mother used to di a boiled sultana cake and I have been known to make it too. Brings back memories

Its fun to be able to eat the proprs. Looks so moist and delicious. What are sultanas? A fruit I am assuming.

This cake is the only cake I would be tempted to eat as I don't really like cake. The sultanas give it moisture and flavour. This piece of cake is beautifully photographed - I actually have a setting on my camera for food but have never used it!

Oh my gosh...that looks divine!!! Just what I don't need to see on day two of my diet. But I'm definitely saving the recipe for the day I reach my goal weight!!! Beautifully photographed!
