somewhere i go to eat and something i like to do at home
for the final me-march challenge post.
today i made myself a little bit useful by making partner's favourite fish dish: baked salmon fillet with brown rice and cremini mushroom topping.
this is very easy to prepare. you mince and sautee a whole onion, sliced cremini mushrooms and a cup of cooked brown rice; wash the fish fillet and put in a cookie pan covered with foil - i like to spray the spoil with pam or i just oil the foil. when the rice and mushroom mixture is no longer very hot, mix it in with some mayonnaise. cover the whole fillet with the mixture on top of the fillet. bake in oven for about 20 minutes, depending on the thickness; temperature 355 degrees.
serve over a bed of lettuce or mixed greens and pour some kraft's mandarin orange salad dressing. have it with your favourite white wine.
