Zucchini!! And sunshine. What more could you ask for. I was just given some zucchini today and will stir fry mine with some onion and green pepper Good eating. Nice sunny shot!
I'm putting mine in a pilaf as they are the size of my finger and only have four!! Second time I've found any!! Great weather for the Open was watching last night and thought of you!! My veg garden is a disgrace...have been weeding ever since I delivered the wedding salads!!
@fannyb I still don't know where these have come from & not sure what to do with them. Harry won't eat them for a start. I know I can slice them with tomatoes & cheese & bake but not much else really. A pilaf I wonder!!!!! The Open going well with great weather..a little wind forecast tomorrow so that should shake them up a bit!!!!IA lovely day for the wedding & your salads would be appreciated!
@cdonohoue Ah just seen your recipe Cathy & it sounds good, you call these zucchini in the US then, I presume they are the same! I have some green peppers & onion, will be tasty !

I love them in Tians (French vegetable dish,) Pat. They are delicious that way and it's easy to make. Many simple recipes out there. I liked Martha Stewarts. Layered and sliced eggplant, tomatoes, zucchini, potatos, etc. Whatever you have on hand. Olive oil and spices drizzled over and bake. Yummy.
Oh Wow !! The fairies have been at work. Have you tried chocolate and courgette cakes ? My daughter was given one and she said it was gorgeous. She is bringing me the recipe.

Call them Courgettes or Zucchinis, they are delicious. I really enjoy them. Actually my zucchini soup is delicious. If you want it, let me know. Great POV for the shot.

Lightly spray shallow microwaveable baking dish with cooking spray.
Into large bowl stir together:
1 large zucchini, coarsely grated
4 cups bread cubes or unseasoned croutons
1 small tomato, cored and diced
2 cloves of garlic, finely chopped
1/8 tsp pepper
½ cup parmesan cheese
4 eggs, beaten
4 oz Monterey jack cheese, cut into ½ inch cubes
1 small can mushroom pieces and its juice
1 T white wine
Spoon into baking dish, pack lightly.
Cover with microwave-safe plastic wrap, vented at one side.
Microwave at full power for 16 minutes, turning once every 4 minutes.
Let stand on solid surface for three minutes. Serve warm.

With pleasure I am sharing my Zucchini soup, which is one my trademarks. My children have always loved it, even when they were young and didn't like veggies:
--3 lbs zucchini
--1 onion
--1 garlic clove
--salt and pepper to taste
--2 cups chicken or vegetable broth
--1 cup of water
--1 cup of heavy cream (or half and half)
Cut the zucchini ends and cut them in 1 inch chunks. Place them in a pan, add the onion, garlic, salt and pepper, plus the broth and water.
Cook it, covered, at medium heat, for about 10 minutes from the moment it starts boiling.
Transfer it to the blender and blend it until it's all liquid.
Return it to the pan and add the cream. Mix it, and warm it up at low heat only until it is warm enough to eat it. Don't let it boil.
If you don't like to add the heavy cream, you may add some cooked rice when it's in the blender, which will make it thicker.

Well aren't you lucky? (Depends if you like courgettes or not!) Mu husband won't eat them either. I've just read all through your comments and am amazed at the interest and the recipes. My veg patch (allotment) is a disgrace too - full of weeds. When I came back from holiday all the tomatoes and potatoes had died from the dreaded potato blight. The courgettes are very slow to take off despite all the rain! I must try some of your recipes.
