Neil tried a new recipe last night - South Indian fish curry - it was delicious.
1 onion, sliced into wedges
2 tbsps sunflower oil
1 red pepper sliced thinly
2 garlic cloves sliced thinly
1 tsp black/brown mustard seeds
1 tsp ground coriander
1/4 tsp turmeric
1/4 tsp chilli powder
1 tsp grated root ginger
400 ml can coconut milk
6 fl oz water
1lb any firm white fish fillet, cut into chunks
fresh coriander & lime for garnish if liked
Fry onion in oil until just golden, add red pepper, garlic cloves & mustard seeds & fry for 2-3 more minutes.
Add coriander, turmeric, chilli powder & root ginger & stir-fry one minute.
Add coconut milk and water & simmer for 8-10 mins.
Season, add fish & simmer gently, covered, for 4-5 mins.
Garnish with fresh coriander and lime wedges and serve with basmati rice. (We happened to have some cherry tomatoes in the fridge and they went in too - very nice.)
@tishpics It was very good - I don't really like eating Indian when we are out but the recipes Neil makes at home are much milder, more like Thai recipes.
Ooh Hazel this looks lovely and you've now provided me with yet another recipe. I have bought the ground rice ready to make the cake but haven't had time to do it yet but perhaps nearer the weekend I might find the time. Now I've got another recipe to try - thanks
